Tell us a little bit about yourself…

Hey there, I’m Callum, the Head Chef at Enderby House. As a true Londoner, I’ve spent my entire life in this vibrant city. My culinary adventure kicked off at the tender age of 16 when I dove headfirst into the world of cooking.

 

Joining the Youngs team in 2021 as a chef de partie, I poured my heart and soul into my craft, putting in the hard yards and long hours that come with the territory. Through sheer determination and a passion for this incredible profession, I steadily climbed the ranks, earning the role of sous chef in November 2021. Then, in June 2022, I received the offer of a lifetime: the chance to step into the role of Head Chef at Enderby House. It was an opportunity I simply couldn’t resist.

What made you become a chef?

Cooking has been a passion of mine since I was a kid, and it was my experiences cooking alongside my parents that fueled my love for food. Exploring the kitchen and experimenting with a wide range of flavors, from savory to sweet, brought me so much joy. Being able to create dishes that put smiles on people’s faces and bring them together is what inspired me to become a chef.

What celebrity chefs inspire you?

I draw inspiration from culinary masters like James Martin, whose unwavering passion for desserts and all things sweet ignites my own creativity. Another chef who leaves me in awe is Michael O’Hare, renowned for his unique and eccentric artistic plating. His unconventional approach inspires me to push boundaries and create stunning presentations that truly stand out. Embracing their influence, I strive to bring a fresh and distinctive touch to the art of plating.

What is your signature dish?

When it comes to my signature dish, the spotlight shines on my irresistible Crayfish & Devon Crab Burger. Picture a mouthwatering combination of succulent crayfish and delicate Devon crab, perfectly nestled within a soft brioche bun. The flavors truly come alive with the addition of tangy pickled fennel and cucumber, creating a harmonious blend of textures and tastes

If you could invite anyone to dinner, dead or alive, who would it be and why?

If I had the chance to invite anyone to dinner, it would undoubtedly be my wonderful parents. They have been my unwavering pillars of support throughout my career, and I am forever grateful for their encouragement. I would love for them to witness firsthand how their belief in me has shaped me into the chef I am today. Making them proud is my ultimate goal.

Now, when it comes to a celebrity dinner companion, the legendary Sir Rod Stewart would be an absolute dream. Just imagine the captivating stories he would have to share. It would be an unforgettable evening filled with great conversation and memorable moments.

What is your favourite dish on our new menu and why?

As for my favourite dish on your new menu, it has to be the Catch of the Day. The opportunity to work with the finest fish sourced from local day boats, such as stone bass, plaice, and lemon sole, is truly a culinary delight. Served alongside Cornish potatoes, capers, and a samphire burn noisette, it’s a simply delicious combination that showcases the freshness and flavours of the sea. It’s a dish that never fails to satisfy and brings a taste of coastal bliss to every bite.
